Pancakes are one of my favourite breakfasts options, so it was only natural for me to find alternatives that work with ketogenic lifestyle. I have tried a few recipes and the one from ‘The Big Man’s World‘ has been the best so far. I have only made slightest of alterations, and the recipes serves three.

Ingredients:

  • 2 tbsp coconut flour
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1-2 tbsp granulated sweetener of choice
  • 1 tsp cinnamon
  • 3 large eggs
  • 1/4 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips
  • 1/4 cup milk of choice (I used coconut milk)
  • Butter to grease the pan for cooking

Method:

  1. In a high-speed blender or mixing bowl, add all your ingredients, except for chocolate chips, and pulse or mix until a thick batter remains. Stir in the chocolate chips.

  2. Allow the batter to sit for 5-10 minutes. After this time period, if the batter is too thick, add extra milk of choice if needed.

  3. Over low-medium heat, preheat a lightly greased non-stick pan. Using a 1/4 cup, pour even cupfuls of batter into the heated pan. Cover the pan and cook for 2-3 minutes, until the edges are golden and slightly bubbling. Flip and cook for a further 1-2 minutes, or until cooked through. Repeat until all the batter is used up.
